I am currently 26 weeks pregnant and always on the hunt for what is going to make my life easier, especially as the third trimester is inching closer. Over the holiday weekend, I did some gardening outside as the weather was nice. I’m not used to lugging around this extra weight and getting worn out so easily, though. After a few hours of yard work, I was beat and starving!   1. Meal plan. Now this is something I have yet to master, but I’m working on it! If you take an hour each Sunday night to plan out your meals for the week, you’ll save money and can use that time to plan meals for the week to eat while on the go.
  2. Don’t wait until you’re hungry to decide what to eat. Every time I do this, I end up eating unhealthy and crave fried food or sweets.
  3. Stay motivated. If you forgot your meal at home or didn’t have time to pack one, don’t cave in and run to the nearest fast food joint.
  4. Encourage your friend or co-worker to eat clean with you! When you’ve got someone else in the same boat, you can rely on the to keep you honest.

Skinny Baked Brie Phyllo Cups with Craisins, Walnuts and Honey

This recipe was a hit at Thanksgiving last year. I’ve made again since for a get-together with friends and there are always none left. This easy appetizer only involves five ingredients and takes about 15 minutes total to make.

Baked Brie Phyllo Cups with Craisins Walnuts and Honey

Skinny Baked Brie Phyllo Cups with Craisins and Walnuts

Serving Size: 1 mini tart
Calories: 60

Fat: 3 g • Carb: 6.5 g • Fiber: 0.3 g • Protein: 2 g • Sugar: 4 g • Sodium: 59 mg

 

Ingredients:
3 oz light brie, skin removed cut into (15) 1/2-inch cubes
4 tbsp craisins
4 tbsp chopped walnuts or pecans
2 tbsp honey
15 Mini Phyllo Shells (Athens)

 

Directions:
Preheat oven to 325°F.
Combine craisins, chopped nuts and honey in a bowl and mix well. Arrange mini shells on a baking sheet. Fill mini shells with cheese (each piece of cheese weighs about 0.2 oz). Top with sticky craisin/nut mixture and bake 5-7 minutes, or until the cheese melts. Serve immediately.

Delicious Energy Bites Recipe

energy bites recipeI made these delicious energy bites that are perfect for a quick snack. No baking required! These have been a hit in my house and I pop a couple before working out in the morning so I have something on my stomach. The best part? They’re healthy for you and they taste like cookie dough.

See the easy, peasy recipe below.

Ingredients
  • 1 cup rolled oats
  • 1/2 cup peanut butter (I used my homemade peanut butter – recipe found here on Tasty Yummies)
  • 1/2 cup coconut flakes
  • 1/2 cup ground flaxseed
  • 1/2 cup mini chocolate chips
  • 1/3 cup Organic honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon of chia seeds
Directions
  1. Mix dry ingredients together in a mixing bowl.
  2. Add in the vanilla, honey, and peanut butter.
  3. Mix all ingredients together.
  4. Roll into balls and place on a cookie pan lined with parchment paper.
  5. Place in the fridge for 45 minutes so that they harden.
  6. Remove the bites from the pan and store them in a tupperware container in the fridge.
  7. ENJOY!

 

I’m sure these will keep for a week or two, but I guarantee they won’t last in your fridge that long.
